Louie’s Lunchbox – Event Booking & Service Information
How to Request Service
To request food truck service, please email louieslunchbox@gvsu.edu with the following details:
- Event organizer name and contact information
- Department or event name
- Student organizations must have funding secured and provide verification from Student Life
- Event date, time, and location
- Location must be a hard, level surface. Please note the size of the truck may limit accessibility in some areas
- Estimated guest count and preferred service option (see below)
- Payment method (accepted: bank card, GVSU P-Card, Laker Food Co Dining Dollars)
- Menu selection
Once your request is received, our team will follow up to confirm details and finalize service.

Booking Timeline & Lead Times
To ensure proper planning and service quality:
- All event details must be finalized at least 5 business days prior to your event.
- We are unable to accept new service requests with less than 5 business days’ notice
- Saturday and Sunday are not considered business days
Ordering Deadlines
To avoid late fees or service limitations, please follow these deadlines:
- Order by 12 PM Monday → for the following Monday
- Order by 12 PM Tuesday → for the following Tuesday
- Order by 12 PM Wednesday → for the following Wednesday
- Order by 12 PM Thursday → for the following Thursday
- Order by 12 PM Friday → for the following Friday, Saturday, or Sunday
Service Options & Minimum Sales
We offer three styles of service, depending on your event needs:
1. Guest-Pay Event (Traditional Food Truck Service)
Guests purchase their own meals directly from the truck.
- A minimum sales requirement applies to all guest-pay events to ensure service viability
- We will work with you on timing, pricing, and attendance estimates to help meet the minimum and/or ensure we are able to service your event.
2. Voucher Event (Prepaid by Organizer)
The event organizer pre-purchases vouchers for guests to use at the truck.
- Vouchers are valid only for the specified event date
- A minimum of $750 in total sales is required
- Vouchers are prepared based on your confirmed guest count
- Unused vouchers are non-refundable
- Changes to guest count or menu must be made in advance and may be subject to additional fees
3. Hosted Event (Catering Style Service)
The event organizer covers the full cost of service for all guests.
- Menu and pricing are customized based on your event
- Pricing is determined per guest with a confirmed attendance count
- A minimum of $750 in total sales is required
- Final billing is based on the greater of the guaranteed guest count or actual meals served
- Full payment is due 3 business days prior to the event
- Accepted payment methods: credit card or Workday tags
Allergen Notice
Laker Food Co. relies on vendor-provided ingredient and allergen information.
Because food is prepared in a commercial kitchen where cross-contact may occur, we cannot guarantee that any item is completely free of allergens.
Cancellation Policy
- Events may be canceled at any time prior to the scheduled date
- Cancellations made 5 or fewer business days before the event will incur a 50% fee
- Cancellations made within 2 business days of the event will incur a 100% fee
